healthy peanut butter chocolate no-bake chia bars | vegan + sugar-free |

These healthy peanut butter chocolate bars were delicious and easily made in 5 minutes – my kinda snack. *see also peanut butter AND chocolate #somuchyes*

My son helped me make these and he’s a total date fanatic, so this was a fun (healthy) treat for him that I really enjoy too.

no-bake healthy peanut butter chocolate bars

  • Servings: 12

Ingredients:

10-12 pitted medjool dates
2 tablespoons cocoa powder
3 teaspoons chia seeds
5 tablespoons chunky peanut butter (smooth would work too)
1/4 cup peanuts
pinch of sea salt

Directions:

  1. Add everything to a food processor and pulse until dates are blended and everything is combined, but there are a few chunky peanut pieces still.
  2. Press into a square pan and pop in the fridge to chill.
  3. Cut into squares and enjoy! (I kept ours in the freezer in a container – extra delicious that way)

I’m always game for easy and healthy treats for my family and I, this would be an easy customizable recipe too.  You could make it with different nut butters and add in some dried fruit or coconut, I also think drizzling a little melted chocolate over these would be delicious.  Enjoy!
