I was a little overzealous at the grocery store a couple of weeks ago when I bought a huge bag of baby carrots. They’re veering towards their end of their life though and I seriously need to use them up!
I have 5 tasty ways to help finish up those ^ pesky carrots, starting with my favourite:
#1 // PICKLED CARROTS
This was my first time pickling anything and I’m hooked! This was super easy and it used up about 1 cup of carrots (yay!). The recipe I kind of tossed together was this:
- 1 c baby carrots
- 1/2 c white vinegar
- 1/3 c water
- 1 tb white sugar
- 1 clove garlic
- 1/2 tsp salt
- pinch red pepper flakes
- pinch of black pepper
On a saucepan, bring everything (except the baby carrots) to a simmer on the stove, remove and cool a bit. Put carrots in a glass jar and pour mixture over top. Let marinate in fridge for a few hours.
#2 // MAKE A CREAMY CARROT SOUP
Perfect for fall (and it uses up around 3 cups of baby carrots!), this is the recipe I’m planning on using. I’ll post an update if it’s delicious 🙂
#3 // CARROT APPLESAUCE
Perfect for afternoon snacks and a quick bite on the go, I’m going to make this and freeze it in portions. I love finding healthy snacks for my son. Recipe here!
#4 // PEACH CARROT SMOOTHIE
Um… I’ve never added carrots to a smoothie, but I’m willing to try if it gets these carrots out of my fridge! I’ll let you know how the recipe tastes 🙂 Recipe here!
**update** this smoothie was so tasty!! I just threw in two handfuls of baby carrots and approximate measurements of everything else and we all loved it. It’s important to have a decent blender though, because my first try I didn’t and the smoothie had some serious ‘texture’ to it.
#5 // ADD A HANDFUL TO ANYTHING + EVERYTHING
Okay, #5 might seem like a cop out, but I’ve been mowing through this bag because of #5. Making tacos for dinner? Dice up a cup and toss in with the meat (actually I love adding diced carrots to dishes like this, it’s a sneaky way to get veggies in). Making a salad? Add some sliced baby carrots! Yesterday I made pad thai and thinly sliced two huge handfuls and added them in.
I’m down to a 1/4 of a bag, so I think I’m going to mix up a carrot peach smoothie today for Kiel, Bear and I and I’ll share on my instagram 🙂
